What is dial-in exactly?

Dial-in means setting grind, dose and time so the bean extracts in balance – not too sour (under-extracted) and not too bitter (over-extracted).

Which variable to change first?

Usually the grind: finer = slower and stronger extraction, coarser = faster. Only change one variable per attempt.

Do I need a scale?

Recommended, yes. A scale makes dial-in reproducible. The app also helps you improve systematically without one.
